July Wrapped Up
In the middle of Ninawachi property is a pathway that people take daily to get to a farm behind our property. They farm bananas, cocoa, and sugar cane. Past the farming through jungle is a waterfall called Tugsy. Gideon has been many times before and wanted to take us, so we put our boots on and went. The hike was intense, up and down steep hills covered in slick clay & valleys of thick mud. We did not make it to the waterfall this time, it was getting late and we wanted to get back before dark. It gets dark at 6:30 here, year round. So we instead got a very intense workout in and I detoxed the last 6 months of my life in sweat.
We have ate and will still continue to eat some interesting foods. The food here has been good overall, pretty consistent. They serve rice with just about every meal, a veggie salad of some kind, plantain or potato, and a protein. The proteins are the wildcards. This past week we’ve been eating a lot of chicken, but not the parts we are used to. It’s been a lot of hearts, feet, kidney, and other parts I’m unsure of. We have had beef stomach a few times, also known as tripe, I’ll let you google that image on your own. We tried monkey and wild boar, we’ve ate lots of fish cooked many different ways. But below caught me off guard. We haven’t ate this giant snail yet, but I’ve been told it will happen. The locals call them churros.
Josie found a branch of coffee berries this week, it was good entertainment for most the morning. She insisted on shelling each berry for a “toffee bean”. One of the staff members, Santiago, roasts his own coffee beans and gave us a bag to roast ourselves, so we added her small stash to that.
This is a photo of all the staff and students here at Ninawachi. There are five married couples and a single woman on staff. Three female students and five male students currently enrolled. A handful will be graduating this year though and three new students will be prayerfully join us in the new year. The couple in the middle standing are the current directors, Santiago, Venita and their daughter Aydasha (I’m not sure how to spell her name yet). We will be sharing responsibilities with them and working alongside one another. They are both humble, have such a heart to serve the Lord and to evangelize to the lost. For those who have been praying for us while here, thank you. Please continue to pray for us, that our time left here is fruitful and edifying.
